When presented with options independently, consumers showed a striking preference for what appeared to be the more generous offering, even when it contained less product. The reversal occurred once participants could compare the alternatives side by side. This counterintuitive finding emerged from research examining how context shapes valuation.
The visual presentation of quantity can mislead. Christopher Hsee's 1998 study demonstrated this by presenting two ice cream servings: one portion that rose above the rim of a five-ounce cup, and another that remained below the rim of a ten-ounce cup. The first contained seven ounces; the second contained eight.
Hsee's paper, titled Less Is Better: When Low-Value Options Are Valued More Highly Than High-Value Options, asked participants to estimate what they would pay for each serving shown in drawings. The results proved striking: when judged in isolation, the smaller serving commanded an average price of $2.26 compared to $1.66 for the larger one. When both were evaluated together, the valuations shifted to $1.85 for eight ounces and $1.56 for seven.
The cup becomes the measuring stick
Hsee attributed the effect to evaluability—the ease with which a quantity can be assessed. An amount standing alone proves difficult to judge without context, whereas a cup's fullness offers an immediate reference point. Placing the two servings side by side made their actual quantities far easier to evaluate.
This distinction separates having information from making that information accessible. A number printed on a page may be accurate yet fail to convey whether it represents abundance, scarcity, or fair value. A visual boundary can answer that question instantly, even when the boundary itself is not the most meaningful comparison.
Consider storage displays showing 70 units against a 50-unit capacity versus 80 units against a 100-unit capacity. The first exceeds its visual reference while the second falls short—a relationship distinct from the raw quantities. Effective design must clarify which question users are answering.
Evaluation method shapes perception
The finding should not be characterized simply as people choosing the smaller serving after examining both options. Separate evaluation meant participants assessed each option in isolation; joint evaluation enabled direct comparison. These different conditions produced different results, and that difference constitutes part of the discovery.
For product teams, this distinction carries practical weight. A customer viewing a single offer on a landing page operates with a different set of comparisons than someone reviewing a table of competing plans. The same product information can appear in both contexts while the available reference points diverge.
Rigorous testing would preserve the information while varying how it appears, then measure the relevant outcome. Such testing should also separate stated valuations from actual purchases, as these may correlate without one automatically predicting the other.
Recent research confirms the pattern with caveats
A 2023 study published in Collabra: Psychology conducted a preregistered close replication and extension of three studies from Hsee's original work, involving 403 participants. The research explored scenarios involving gifts, ice cream, and dish sets.
The less-is-better pattern emerged across all three scenarios under separate evaluation. The ice cream effect proved smaller than originally observed: the standardized effect size measured 0.32 compared with the original 0.74. The ice cream scenario also showed reversed ordering when servings were evaluated jointly, though support for the broader more-is-better prediction weakened across scenarios, particularly for dish sets.
This combination matters significantly. A replication can support a finding's direction without reproducing its magnitude, and results can diverge between tasks within the same research program. Reporting only that a study "replicated" would omit information essential for determining how broadly to apply the conclusions.
Side-by-side comparison has limits
Additional research demonstrates why joint evaluation should not be treated as a universal remedy. A 2021 paper by Eyal Gamliel and Eyal Pe'er examined cases where people misjudge improvements in measures such as fuel efficiency.
Efficiency and resource savings do not always follow a linear relationship. The authors discovered that under certain conditions, the reduced sensitivity to magnitude that occurs during separate evaluation actually produced judgments closer to actual savings. Joint comparisons could instead reinforce incorrect linear thinking.
This represents a boundary on the design principle rather than a refutation of the ice cream finding. Comparing quantities of identical products differs fundamentally from interpreting a rate whose practical meaning demands additional calculation. The optimal display depends on what readers must understand.
Choosing the right reference point
For businesses presenting offers, the critical question concerns which comparison the page facilitates most easily. Container fullness, discount percentage, unit price, and total quantity each address different questions. Emphasizing one can make another harder to evaluate.
Transparent comparison should make relevant quantities and costs readily apparent while avoiding the assumption that visual fullness equals value. Testing should employ outcomes appropriate to the claim, with context and comparison conditions carefully documented.
The experiment's power stems from a straightforward contradiction: one serving appeared more abundant while containing less. Fully understanding that contradiction requires maintaining focus on both the actual amount of ice cream and the circumstances under which it was evaluated.
